Alternate install CD でインストールすれば、ソフトRAIDならメニューの選択で作ってくれるよ。
作って稼働させてくれるだけなので、何か起こったときの管理は自分で CUI でやるわけだが・・・。

* Alternate install CD
The alternate install CD allows you to perform certain specialist installations of Ubuntu.
It provides for the following situations:
1.setting up automated deployments;
2.upgrading from older installations without network access;
3.LVM and/or RAID partitioning;
4.installs on systems with less than about 256MB of RAM
(although note that low-memory systems may not be able to
run a full desktop environment reasonably).

3 を見て、通常の Desktop CD は対応しないんだなぁと初めて知った。
